Storage losses generate significant amounts of waste. Here are our tips on how to prevent them.

Optimising your purchasing processes is the first step towards preventing food spoilage. Buying the right quantities reduces food waste and helps save costs.

  • Introduce optimised purchasing processes based on stock management and forecasting. Use tools such as inventory and shopping lists.

  • Opt for just-in-time deliveries instead of ordering large quantities in advance.

  • Apply the First In, First Out (FIFO) method to ensure stock is used in a timely manner. Clearly label products with their purchase date and use-by date.

  • Extend shelf life by vacuum sealing, freezing and marinating meat and vegetables.

  • Use innovative food preservation technologies, such as ozone treatment.

  • Apply the sous-vide method to extend the shelf life of ingredients.

  • Prepare products such as bread, cakes and desserts in-house to maintain daily control over production quantities.

  • Introduce a “Daily Special” to use up stock approaching its expiry date.
