"Sustainable Kitchen" - Market analysis for sustainability training

Raising awareness for sustainability in the hotel’s kitchens is the approach of our Sustainable Kitchen project. Our research in the first milestone of the project shows that there is a high market potential for sustainability training in the hospitality sector in Egypt. For this purpose, forty-two kitchens and eight instructors from different hotel companies in Egypt were interviewed by our project partners – the Egyptian Chefs Association. As well, the training possibilities were analyzed. Previous studies limit their content on saving energy and water. The goal is to start the “Sustainable Kitchen” training program in spring 2017, the International Year for Sustainable Tourism.

The Sustainable Food industry project has shown that the training of the hotel staff is one of the key factors for realizing a sustainable food offer in hotels.
